Light, Airy, and Packed with Antioxidants
If you’ve ever walked past a Filipino bakery and saw a cake that looked like it was pulled straight from a dream, you’ve likely met the Ube Cake.
Ube (purple yam) is the soul of Filipino desserts. It doesn’t just provide that iconic, deep violet hue; it offers a mellow, nutty sweetness that tastes like a sophisticated blend of vanilla and pistachio. This recipe uses a chiffon base to keep it light and airy, paired with a silky whipped cream frosting.

🛒 Ingredients
For the Ube Chiffon Cake:

Dry Mix: 2 cups cake flour, 1 ½ cups sugar, 1 tbsp baking powder, ½ tsp salt, 3 tbsp Ube Superfood Powder.

Wet Mix: 6 large egg yolks, ½ cup vegetable oil, ¾ cup + 2 tbsp milk (the extra milk compensates for the powder's absorption), 1 tsp ube extract.

Meringue: 6 large egg whites, ½ tsp cream of tartar, ½ cup sugar.
For the Ube Whipped Frosting:

2 cups heavy whipping cream (cold)

½ cup powdered sugar

1 tbsp Ube Superfood Powder (sifted to avoid clumps)

1 tsp ube extract
👩Instructions
1. Incorporate the Powder
Sift the Ube Superfood Powder together with your cake flour, sugar, and baking powder. This ensures the color and nutrients are evenly distributed and prevents purple "clumps" in your crumb.
2. The Batter
Whisk your egg yolks, oil, milk, and ube extract. Gradually whisk in the dry mixture (including the ube powder). You’ll notice the batter becomes a deep, beautiful violet immediately.
3. The Meringue & Fold
Follow the same process as before: beat your egg whites with cream of tartar and sugar until stiff peaks form. Gently fold the meringue into your purple batter.

4. Bake
Bake at 175°C for 25–30 minutes. Remember to let the cakes cool completely (inverted) so they don't lose their height.
5. Superfood Frosting
When making the frosting, add the ube powder to the heavy cream before you start whipping. The powder acts as a natural stabilizer, helping your whipped cream hold its shape even better!
